Do not cast off. Cut yarn about 6 inches from project and tread onto yarn needle. Ease each loop off DPNs and run yarn needle through each loop and pull tight. Tie several knots and weave in end.
Turn to right side and set eyes then stuff body with fiberfill.

After stuffing sew up end of rat using the tail you left when you started knitting.
Embroider nose and cut 3 pieces of pink yarn about 12 inches each.
Thread all three peices of yarn onto yarn needle and run through sewn up end of rat.
Braid yarn and tie knot in end when finished.

Cut 2 ears from white felt and 4 little feet from pink felt.
Either hot glue or sew on ears and feet.
These little rats make great gifts for scientists.

 Look at them glow :)
I knitted ears for the rat in these pics (prototype)
I found that the felt ears were better looking.
